Got Carrots??

It’s mid Spring…mid Spring guys and it was damp and cloudy with some drizzle and in the 50s  allllll day…until like 5pm lol.

I wanted soup to warm up my bones, but wanted something different than the normal soups I make.  I remembered my mom would make carrot soup when we had a bunch of carrots to get rid of.  I would eat it back then but it wasn’t my favorite.

So, I decided to fix it up my way! (No offense mom)

Ingredients I used:

1 large onion chopped

2 celery stalks chopped

1 clove of garlic chopped

5 or 6 carrots chopped

1 tbs. Of butter 

1 tbs. Olive oil

1 1/2 cups of water

4 cups of vegetable broth

1 tbs. Thyme or any spices you choose

salt and pepper

I used my cast iron dutch oven for this, this is basically the only pot I use now to cook with because it’s just amazing no matter what your recipe. You can find the one I have here:  https://amzn.to/2nKzexV

Heat the oil and butter until the butter is melted.

Toss in the onion, celery and garlic and cook for about 5 minutes.

Add the thyme and carrots and cook just a couple of minutes.

Add the vegetable broth and water..bring to a boil and then simmer 25-35 minutes.

Once the carrots are tender I use my KitchenAid hand blender https://amzn.to/2wdsbl1 so I can blend it right in the pot. I received this as a bridal shower gift and honestly I’m totally in love with it after just one use.  If you don’t have a hand blender no worries at all, you can mix it in batches in your regular blender.

I loved how this soup turned out.  Of course I made hubby try some, he liked it but isn’t a huge fan  of carrots so kudos to him for trying it lol.

That’s it guys, a warm delicious soup to take the chill out of your bones..plus it’s HEALTHY!!!
