Hey guys so it is finally here..Summer!!! I don’t know about you but where I live it seemed like an eternity for winter to get the heck out of here, it was like an annoying guest that just wouldn’t leave!
So now that its warm and sunny out, my garden is starting to really grow and Im so excited for fresh veggies! One of my favorite things to grow in summer are cucumbers. They are so tasty and healthy for you too! I love cucumber sandwiches with tomatoes, or I will just eat them plain with some balsamic vinegar. I can honestly eat them all day everyday. There are a lot of Delicious recipes you can make with them as well. 🙂
One of my favorite things to make is a cucumber salad. Its delicious and a hit at parties and dinner. You can use whichever type of cucumber you prefer for this and adjust the ingredients to your liking. This is the recipe my mom would use:
RECIPIE:
2 or 3 cucumbers, sliced thin
1 medium onion sliced thin, I use red onion for the color
1/2 Teaspoon salt
1 Cup white vinegar
1 Tablespoon dill
1/2 cup sugar
1/2 cup water
- Place the cucumbers in a large bowl, season with salt and let sweat for about an hour..Drain the liquid and mix in the onion
- In a saucepan dissolve the sugar, water, and vinegar over medium high heat about 5 minutes..pour over the cucumbers and add the dill..chill for about an hour
