Hey guys, Happy Friday! I’m feeling a bit under the weather today so I thought I would share my favorite food that cheers me up, chicken soup!
So if you guys saw my post the other day, my Husband made a really kick ass beer can chicken on the grill. It was really delicious. The other best part of that was knowing I was going to make soup with the leftover carcass with a bunch of meat still on it, which is what I did yesterday.
I placed the whole leftover chicken in my large stock pot and covered it with water and let it start to boil.
Once it starts to boil I turn the heat to low and simmer for 6 hours. I then place a strainer over a smaller pot and pour everything in the strainer. I move the chicken around to make sure all the juices drain out. This also gives me time to get the veggies ready. I cut up 2 onions and about 5 carrots and about a half a bunch of celery.
Heat up some olive oil in a pot, add the onions, carrots and celery I also added some Thyme.
As the the veggies cook I start taking the meat off the bones, some of the bones are small so check carefully.
Once all the chicken is removed from the bones put it in the pot and poor the chicken stock in. I cook it for about a half hour or so until the veggies are done.
That’ts it guys,a beautiful bow of deliciousness. Easy peasy right?
