Ingredients
- 1 red onion chopped
- 1 yellow onion chopped
- 3 or 4 cloves of garlic chopped
- 1 large red bell pepper chopped
- 4 celery stalks chopped
- 3 carrots chopped
- 1 small to medium size cabbage chopped
- 1 28oz can of crushed tomatoes
- 2 Knorr Vegetable Bouillon Cubes..(I use Knorr Bouillon cubes when I do not have any homemade veggie, chicken or beef stock on hand)
- olive oil to coat bottom of pan
- basil, oregano, marjoram, thyme, rosemary, red pepper flake
- salt and pepper to taste (optional)
- 6 cups of water
Instructions:
Coat the bottom of pan with olive oil. Saute onions and garlic for about 5 minutes…add the chopped red pepper, celery and carrots and spices about a teaspoon of each spice..mix in and cook for about 3 minutes..throw in cabbage, can of crushed tomatoes, bouillon cubes and water..
Bring to a boil and then turn heat down low to simmer.
Cook until veggies are soft or to your liking.
