Rhon's Italian Veggie Soup
Warm up your winter bones with this full of flavor, chunks of veggies comfort soup!
Ingredients
- 3 Onions chopped or cut into chints
- 3 Garlic cloves sliced
- Bunch Celery chopped or cut into chunks
- 2 Red Bell Pepper chopped or cut into chunks
- 5 Carrots cut thick chunks
- 5 Roma Tomatoes chopped or cut into chunks
- 1 Packet Italian Dressing (I used Good Seasons) adjust if you like
- 1 Small Can Tomato Paste adjust if you like
- 2-4 Beef Bouillon cubes ( I used Knorr) adjust if you like
- 1-2 Tbs Oregano adjust if you like
- 1-2 Tbs Thyme adjust if you like
- 1-2 TBS Basil adjust if you like
- 1-2 Tbs Marjoram adjust if you like
- 1-2 Tbs Dill Weed adjust if you like
- 2 Tbs Olive Oil
- 10-12 Cups Veggie Stock
Instructions

After all vegetables are cut/chopped mix all together in a large bowl (onion and garlic included

In a large soup/stock pot add Olive Oil and heat on medium heat

Once hot, add all veggies..cook for about 5-8 minutes

Add can of Tomato Paste, mix in

Add Veggie Stock

Add Spices
-
Bring to Boil and then simmer until veggies are done to your liking, you may need to add more veggie stock or water
