Mad About Meatloaf

Can we talk meatloaf for a moment? Meatloaf to me is life, it’s basically my everything in regards to food.  It’s my favorite comfort food and these days, with all the craziness going on, I will take all the comfort I can get haha.

There are so many different ways to make it as well.  My mom would make it with tomato sauce, Ive seen it made with ketchup and Ive also made it with onion soup mix and added peppers.  It’s one of those things where you can basically add whatever you like and it would turn out fabulous.

So for tonight’s dinner…that’s right..it’s meatloaf.  HOORAY!

This recipe is basically my go-to recipe, my Fiance (now Husband) loves it so yaaays wife-in-training bonus points for me lol.  It’s mostly just him and I in the house so if you have a larger family you may need to adjust the amount of ingredients.

Preheat oven to 350° F.

1  1/2 lbs ground beef

2 eggs

1/4 cup chopped onion ( you can add more if you like)

1/4 cup ketchup

1 cup breadcrumbs

1/2 cup parmesan cheese

1/3 cup worcestershire sauce

Throw all these ingredients together in a bowl and mix together until everything is combined.  I mix everything now in my stand mixer, https://amzn.to/2MoFJW0 which makes it so much easier and my hands stay clean lol. ( I received one for Christmas and this thing is amazing, I’m probably getting an unhealthy obsession for it so stayed tune for a post or series on this bad ass little machine lol)

So now that everything is mixed together, place in a baking dish and form into a loaf, once your loaf is formed sprinkle a little bit of worcestershire sauce on top.

Bake in oven for about an hour or until done and let stand about 5-10 minutes uncovered before serving.

This meatloaf comes out super moist and full of flavor.  Served with mashed potatoes and corn we had comfort food at its finest in our bellies in no time.

Mad About Meatloaf

Comfort food at its finest no matter which way it is made.  This is my go-to recipe that is also "Husband approved". (Yaaayy wifey win)! Ground Turkey is also delicious with this recipe if you don't wish to use beef.

Ingredients

  • 1.5 lbs Ground Beef or Ground Turkey
  • 2 Eggs
  • 1/4 Cup Onion chopped you can add more if you like
  • 1/4 Cup Ketchup
  • 1 Cup Breadcrumbs
  • 1/2 Cup Parmesan Cheese
  • 1/3 Cup Worcestershire sauce

Instructions

  1. Preheat oven to 350 F

  2. Throw all the ingredients in a bowl and mix until everything is combined.  I mix everything in my stand mixer now, so this is what I use to mix meatloaf..total game changer lol

  3. Once everything is mixed together, place in a baking dish and form into a loaf.  Once your loaf is formed, sprinkle a little bit of the Worcestershire sauce on top.

  4. Bake uncovered for 1 hour or until done then let stand for about 10 minutes

Ok, not gonna lie here… the presentation in this picture is awful but I was starving and just wanted to scarf this down, which i did probably in the most unladylike manner ever lol “shrugs”
